- 3 eggplants
- 1/2 stick oleo
- 1 tsp. chopped garlic
- small amount olive oil
- 1/4 c. Romano cheese
- dash of cayenne pepper
- dash of Salad Supreme seasoning
Directions

1Cut eggplants in quarters.

2Peel and boil until tender.

3Remove seeds.

4Mash or slice.

5Set aside.

6Saute garlic in olive oil and oleo.

7Add eggplant.

8Fry until brown.

9Add pepper cheese and Salad Supreme.

10Serve warm with crackers or Melba rounds.
