- 2 large eggplant
- 1 Tbsp. margarine
- 1 large onion
- 2 eggs, beaten
- 2 c. Cheddar cheese, shredded
- buttered bread crumbs
Directions

1Peel eggplant and cut into slices.

2Boil in salt water until tender; drain and mash.

3Chop onion and saute in margarine. Combine other ingredients and top casserole with buttered bread crumbs. Bake at 350° for 30 minutes.
