  • 2 large eggplant
  • 1 Tbsp. margarine
  • 1 large onion
  • 2 eggs, beaten
  • 2 c. Cheddar cheese, shredded
  • buttered bread crumbs

Directions

    Peel eggplant and cut into slices.

    Boil in salt water until tender; drain and mash.

    Chop onion and saute in margarine. Combine other ingredients and top casserole with buttered bread crumbs. Bake at 350° for 30 minutes.
