- 1/2 loaf bread, cubed
- Romano cheese, grated
- parsley, salt, pepper and garlic
- eggplant
- Mozzarella or Swiss cheese
- tomato sauce
Directions

1Soak sliced eggplant in water (removes bitterness); saute in oil.

2Mix bread, Romano cheese, parsley, salt, pepper and garlic in bowl.

3In casserole, add layer of eggplant slices, mixed bread cubes, Mozzarella cheese and tomato sauce.

4Repeat layers.

5Bake at 350° for approximately 30 to 45 minutes.
