  • 1/2 loaf bread, cubed
  • Romano cheese, grated
  • parsley, salt, pepper and garlic
  • eggplant
  • Mozzarella or Swiss cheese
  • tomato sauce

Directions

    Soak sliced eggplant in water (removes bitterness); saute in oil.

    Mix bread, Romano cheese, parsley, salt, pepper and garlic in bowl.

    In casserole, add layer of eggplant slices, mixed bread cubes, Mozzarella cheese and tomato sauce.

    Repeat layers.

    Bake at 350° for approximately 30 to 45 minutes.
