- 1 eggplant
- 1 c. water
- 1/2 c. onion
- 1 c. milk
- 1 c. cracker crumbs
- 1/4 c. butter
- juice of 1 lemon
- 1/4 c. bell pepper
- 1 egg
- dash of pepper
Directions

1Peel eggplant and cut in slices.

2Dip eggplant in lemon juice. Cook in boiling salty water until tender.

3Drain.

4Mush eggplant in small pieces.

5Add onions and bell pepper.

6Beat egg and combine with milk, black pepper and cracker crumbs.

7Mix all ingredients together and bake in a greased baking dish at 350° for 30 to 40 minutes.
