Eggplant Casserole

  • 1 eggplant
  • 1 c. water
  • 1/2 c. onion
  • 1 c. milk
  • 1 c. cracker crumbs
  • 1/4 c. butter
  • juice of 1 lemon
  • 1/4 c. bell pepper
  • 1 egg
  • dash of pepper

Directions

    Peel eggplant and cut in slices.

    Dip eggplant in lemon juice. Cook in boiling salty water until tender.

    Drain.

    Mush eggplant in small pieces.

    Add onions and bell pepper.

    Beat egg and combine with milk, black pepper and cracker crumbs.

    Mix all ingredients together and bake in a greased baking dish at 350° for 30 to 40 minutes.
