- 2 lb. eggplant or 6 small ones, peeled and sliced
- 1 lg. onion, chopped
- 1 Tbsp. butter
- 1 egg, beaten
- 1/2 lb. sharp cheddar cheese, grated
- 1 lb. shrimp (optional)
- bread crumbs
- seasoned bread crumbs
Directions

1Boil eggplant in salted water, drain.

2Saute onions in butter.

3Add eggplant, egg, and cheese. Cook a little more, until cheese is melted.

4Add a little bread crumbs, then add seasoned bread crumbs on top, then dot with butter.

5Bake at 350° in a pan for 45 minutes.
