  • 2 lb. eggplant or 6 small ones, peeled and sliced
  • 1 lg. onion, chopped
  • 1 Tbsp. butter
  • 1 egg, beaten
  • 1/2 lb. sharp cheddar cheese, grated
  • 1 lb. shrimp (optional)
  • bread crumbs
  • seasoned bread crumbs

Directions

    Boil eggplant in salted water, drain.

    Saute onions in butter.
  3. 3
    Add eggplant, egg, and cheese. Cook a little more, until cheese is melted.

    Add a little bread crumbs, then add seasoned bread crumbs on top, then dot with butter.

    Bake at 350° in a pan for 45 minutes.
