- 1 medium eggplant
- 2 Tbsp. oleo or butter
- 1/2 c. milk
- 1 beaten egg
- 1/2 c. bread crumbs
- 1 small can mushroom soup
- 1/2 c. diced onion
- 1/4 tsp. black pepper
- 1 small jar chopped pimentos
- 1/2 c. grated Cheddar cheese
Directions

1Cook peeled and cubed eggplant in salted water until tender; mash and add remaining ingredients, except for the grated cheese. Pour into greased baking dish; sprinkle grated cheese over top. Bake 30 minutes or until brownish in color.
