- 1/2 c. canned milk
- 1 Tbsp. onion, grated
- 1 to 2 c. sharp cheese, grated
- 2 to 3 eggs, separated
- 2 Tbsp. flour
- 2 Tbsp. butter
Directions

1Add butter, flour, egg yolks and other ingredients to mashed eggplant after it cools.

2Fold in stiffly beaten egg whites.

3Bake at 350° for 45 to 50 minutes in a pan of water.
