  • 1 eggplant, cooked
  • 1/2 c. canned milk
  • 1 Tbsp. onion, grated
  • 1 to 2 c. sharp cheese, grated
  • 2 to 3 eggs, separated
  • 2 Tbsp. flour
  • 2 Tbsp. butter

Directions

    Add butter, flour, egg yolks and other ingredients to mashed eggplant after it cools.

    Fold in stiffly beaten egg whites.

    Bake at 350° for 45 to 50 minutes in a pan of water.
