- 2 small eggplant
- 1 or 2 green peppers, sliced
- salt and pepper
- 2 Tbsp. butter
- 8 oz. Mozzarella cheese, sliced or grated
- 1 medium red onion, sliced
- 2 large sliced tomatoes
- 2 Tbsp. flour
- 1/2 can Parmesan cheese
Directions

1Slice eggplant 1/2-inch thick, leaving skin on. Arrange slices in a 13 x 9 x 2-inch casserole dish.

2Layer onion, green peppers and tomato slices.

3Sprinkle salt, pepper and flour on top. Dot with butter and sprinkle with Parmesan.

4Top with Mozzarella. Cover top lightly with foil and bake at 375° for 30 to 45 minutes or until eggplant is done.
