  • 1 red pepper
  • 3 to 4 medium size potatoes
  • 1 tomato (or a can of tomatoes)
  • 1 onion
  • 1/4 c. olive oil
  • parsley
  • oregano
  • garlic powder
  • lemon pepper

Directions

    Wash vegetables and cut up in chunks.

    Mix in herbs.

    Pour oil over mixture.

    Cover with foil and bake at 350° in the oven for approximately 45 minutes or until potatoes are done.
