- 1 large eggplant, peeled and sliced
- 3 medium tomatoes, peeled and sliced
- 1 large bell pepper, diced
- 1 large onion, sliced and separated into rings
- bacon strips
- 1 1/2 c. bread crumbs
Directions

1Cook eggplant in salt water.

2Drain.

3Layer in buttered 2 1/2-quart casserole the eggplant, tomato slices, onion, pepper and bread crumbs.

4Salt and pepper each layer.

5Repeat, ending with bread crumbs.

6Place bacon strips on top.

7Bake at 350° for 1 hour.
