- 2 medium eggplant
- 1 (6 oz.) pkg. Mozzarella cheese, diced
- 2 eggs, beaten
- 1/2 c. oil
- 1/2 c. bread crumbs
- 1 (1 lb.) jar spaghetti sauce
Directions

1Peel the eggplant. Cut into 1/2-inch slices. Dip in egg and bread crumbs.

2Brown both sides.

3Place 1/2 in casserole dish and top with cheese.

4Add rest of the eggplant.

5Bring sauce to a boil and pour over eggplant.

6Add rest of cheese.

7Cover casserole. Bake at 350° for 20 minutes.
