Eggplant Casserole

  • 2 medium eggplant
  • 1 (6 oz.) pkg. Mozzarella cheese, diced
  • 2 eggs, beaten
  • 1/2 c. oil
  • 1/2 c. bread crumbs
  • 1 (1 lb.) jar spaghetti sauce

Directions

    Peel the eggplant. Cut into 1/2-inch slices. Dip in egg and bread crumbs.

    Brown both sides.

    Place 1/2 in casserole dish and top with cheese.

    Add rest of the eggplant.

    Bring sauce to a boil and pour over eggplant.

    Add rest of cheese.

    Cover casserole. Bake at 350° for 20 minutes.
