- 1 medium eggplant, peeled and cubed
- 2 Tbsp. margarine
- 1/2 c. bread or cracker crumbs
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. milk
- 1 egg, beaten
- 1/2 c. American cheese, grated
Directions

1Cook eggplant in small amount of boiling, salted water until tender. Drain and mash.

2Add margarine, bread crumbs, salt, pepper, milk, beaten egg and 1/4 cup grated cheese.

3Mix well. Pour into buttered casserole. Top with remaining cheese. Bake at 350° for about 20 minutes.
