Eggplant Casserole

  • 1 medium eggplant, peeled and cubed
  • 2 Tbsp. margarine
  • 1/2 c. bread or cracker crumbs
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. milk
  • 1 egg, beaten
  • 1/2 c. American cheese, grated

Directions

    Cook eggplant in small amount of boiling, salted water until tender. Drain and mash.

    Add margarine, bread crumbs, salt, pepper, milk, beaten egg and 1/4 cup grated cheese.

    Mix well. Pour into buttered casserole. Top with remaining cheese. Bake at 350° for about 20 minutes.
