- 1 large eggplant
- 1/2 c. mayonnaise
- 1 medium onion, chopped
- 1/2 c. mushroom soup
- salt
- pepper
- 1 egg
- 1/3 stick margarine
- 3/4 c. cracker crumbs
- 1 c. sharp Cheddar cheese
Directions

1Cook eggplant in small amount of water; drain and mash.

2Add salt and pepper to taste and mix with all ingredients, except margarine, cracker crumbs and cheese.

3Place in casserole dish. Cover with cheese and cracker crumbs.

4Dot with margarine.

5Bake at 350° for 15 to 20 minutes.
