Garlicy Eggplant Salad

  • 4 Long thin eggplants
  • 1/2 Onion
  • 4 leaves Lettuce (optional)
  • 50 ml Soy sauce
  • 1/2 tsp Grated garlic

Directions

    Cut the eggplants into thin round slices.

    Thinly slice the onion, and rip up the lettuce into bite-sized pieces.

    Heat oil in a frying pan, and stir-fry the eggplants.

    Transfer to a bowl and let them cool off.

    In the meantime, mix the ingredients, and set aside.

    When the eggplants are mostly cooled, serve on a plate.

    Pour the dressing on top, and enjoy.
