Name: Eggplant Casserole
Ingredients: 3 large eggplant, peeled; 1/2 lb. sausage; 3 green onions, chopped; 1 c. onions, chopped; 1 c. celery, chopped; 1 (6 1/4 oz.) pkg. cornbread stuffing mix; 1/2 tsp. black pepper; 1/2 tsp. salt; 2 c. grated cheese

1/2 lb. sausage

1 c. celery, chopped
1 (6 1/4 oz.) pkg. cornbread stuffing mix
1/2 tsp. black pepper
1/2 tsp. salt
2 c. grated cheese

Directions

Cook eggplant; drain.

Cook sausage, saute onions and celery. Prepare stuffing mix according to package instructions.

Mix all together.

Bake for 20 minutes in a 325° oven.

Top with cheese. Cook until cheese is melted.
