- 3 large eggplant, peeled
- 1/2 lb. sausage
- 3 green onions, chopped
- 1 c. onions, chopped
- 1 c. celery, chopped
- 1 (6 1/4 oz.) pkg. cornbread stuffing mix
- 1/2 tsp. black pepper
- 1/2 tsp. salt
- 2 c. grated cheese
Directions

1Cook eggplant; drain.

2Cook sausage, saute onions and celery. Prepare stuffing mix according to package instructions.

3Mix all together.

4Bake for 20 minutes in a 325° oven.

5Top with cheese. Cook until cheese is melted.
