  • 3 large eggplant, peeled
  • 1/2 lb. sausage
  • 3 green onions, chopped
  • 1 c. onions, chopped
  • 1 c. celery, chopped
  • 1 (6 1/4 oz.) pkg. cornbread stuffing mix
  • 1/2 tsp. black pepper
  • 1/2 tsp. salt
  • 2 c. grated cheese

Directions

    Cook eggplant; drain.

    Cook sausage, saute onions and celery. Prepare stuffing mix according to package instructions.

    Mix all together.

    Bake for 20 minutes in a 325° oven.

    Top with cheese. Cook until cheese is melted.
