- 1 lb. hamburger
- 1 can cream of mushroom soup
- 1/4 c. chopped onions
- 1 medium-sized eggplant
- 1 c. bread crumbs
- 1 lb. grated Cheddar cheese
Directions

1Brown your hamburger with onion in a frying pan.

2Pour off excess fat.

3Add cream of mushroom soup.

4Peel eggplant and cook until soft in salt water.

5Mash up the eggplant and fold it in the hamburger mixture.

6Stir in bread crumbs.

7Pour into greased casserole dish and sprinkle with grated cheese.

8Bake at 350° for 45 minutes.
