- 1 large eggplant
- 2 eggs, beaten
- 1 large onion
- 1/2 lb. grated cheese
- salt and pepper to taste
- 1 can tomato sauce
Directions

1Slice eggplant into 1/4-inch slices and pare; soak for several minutes in salty water.

2Dip eggplant slices into egg and roll in flour.

3Fry until golden brown.

4Place in layers in baking dish, with onions and cheese; season.

5Pour in tomato sauce; cover with remaining cheese.

6Bake for 30 minutes at 350°.
