Eggplant Casserole

Ingredients

  • 1 medium eggplant, peeled and cubed
  • 1 egg, beaten
  • 1 c. bread crumbs
  • 1 small onion, chopped
  • 3 Tbsp. butter
  • 1/2 c. milk
  • Cheddar cheese, shredded
  • Salt and pepper to taste

Directions

    Cook eggplant in boiling salted water 8-10 minutes, drain. Wash with cold water, drain. Add remaining ingredients except cheese. Add a small amount of butter on top of casserole. Bake at 350 degrees for 30 minutes. Remove from oven, sprinkle with cheese. Return to oven until cheese melts.
