- 1 medium eggplant, peeled and cubed
- 1 egg, beaten
- 1 c. bread crumbs
- 1 small onion, chopped
- 3 Tbsp. butter
- 1/2 c. milk
- Cheddar cheese, shredded
- Salt and pepper to taste
Directions

1Cook eggplant in boiling salted water 8-10 minutes, drain. Wash with cold water, drain. Add remaining ingredients except cheese. Add a small amount of butter on top of casserole. Bake at 350 degrees for 30 minutes. Remove from oven, sprinkle with cheese. Return to oven until cheese melts.
