- 1/2 stick oleo
- 1 c. cooked eggplant
- 1 c. grated, medium cheese
- 1 c. crushed saltines
- 1 can cream of mushroom soup
- 1 medium onion, grated
- salt and black pepper to taste
- 1/2 bell pepper, chopped fine
Directions

1Melt the oleo in a 1 1/2-quart baking dish.

2Mix rest of ingredients together and place in baking dish on top of the oleo. Top with a little grated cheese.

3Bake at 350° for 30 minutes in a preheated oven.
