Eggplant Casserole

Ingredients

  • 1/2 stick oleo
  • 1 c. cooked eggplant
  • 1 c. grated, medium cheese
  • 1 c. crushed saltines
  • 1 can cream of mushroom soup
  • 1 medium onion, grated
  • salt and black pepper to taste
  • 1/2 bell pepper, chopped fine

Directions

    Melt the oleo in a 1 1/2-quart baking dish.

    Mix rest of ingredients together and place in baking dish on top of the oleo. Top with a little grated cheese.

    Bake at 350° for 30 minutes in a preheated oven.
