Ingredients
- 1 large eggplant, peeled and cubed
- 1/2 c. chopped onion
- 2 Tbsp. butter
- 2 eggs, beaten
- 1 c. milk
- 1 c. shredded cheddar cheese, 4 oz.
- 10 butter flavored crackers, crushed
- 1/2 tsp. Creole seasoning
- 1/8 tsp. cayenne pepper
- salt and pepper, to taste
Directions

1In a large bowl, soak eggplant in salted water for at least 1 hour; drain well.

2In a large skillet, saute eggplant and onion in butter until tender.

3Remove from heat.

4Stir in remaining ingredients.

5Transfer to a greased 1 quart baking dish.

6Bake, uncovered, at 325 degrees for 45 to 55 minutes or until heated through.

7Makes 6 to 8 servings.
