  • 1 c. milk
  • 1 egg
  • 1/2 c. mild Cheddar cheese (adjust to taste)
  • 1/2 pkg. crackers, crumbled
  • 1/4 c. diced onion
  • 1 large eggplant, sliced, diced and boiled until soft

Directions

    Combine all the ingredients in a bowl.

    Place in a medium size casserole dish.

    Sprinkle extra cheese on top.

    Bake at 350° for 30 to 45 minutes.
