  • 1 large eggplant, cooked and mashed
  • 1 onion, chopped and cooked until tender
  • 1 tsp. salt
  • 1 egg
  • 3 slices bread, crumbled
  • 3 tomatoes, peeled and chopped or 2 c. canned tomatoes
  • 1 c. diced cheese

Directions

    Mix all ingredients together.

    Pour into a casserole dish. Bake at 350° for 35 minutes.

    Remove from oven and lay four slices of American cheese on top.

    Bake until cheese melts.
