- 1 large or 2 small eggplant
- 4 eggs
- 1 small onion
- 1 block Cheddar cheese
- 1 stick margarine
- salt and pepper
Directions

1Cube and boil eggplant.

2Grate cheese and onion.

3Add 3/4 of cheese to onion and eggs.

4Mix together with eggplant.

5Pour into greased casserole dish.

6Add the rest of the cheese to the top. Bake at 300° for 30 minutes.
