  • 1 large or 2 small eggplant
  • 4 eggs
  • 1 small onion
  • 1 block Cheddar cheese
  • 1 stick margarine
  • salt and pepper

Directions

    Cube and boil eggplant.

    Grate cheese and onion.

    Add 3/4 of cheese to onion and eggs.

    Mix together with eggplant.

    Pour into greased casserole dish.

    Add the rest of the cheese to the top. Bake at 300° for 30 minutes.
