- 2 lb. ground beef
- 12 eggplant slices (thick)
- 1/4 c. chopped onions
- 1/2 c. chopped bell pepper
- 2 Tbsp. oil
- 2 Tbsp. flour
- 2 tsp. salt
- 1/4 tsp. oregano
- 2 cans tomato sauce
- 1 1/2 c. sharp cheese, grated
- 1/4 tsp. pepper
Directions

1Peel and slice eggplant.

2Boil in water until tender, then drain.

3Cook beef in skillet with oil (if needed).

4Add onions and bell pepper.

5Cook, stirring, until nicely browned.

6Stir in flour, salt, pepper and oregano.

7Blend, then add tomato sauce. Arrange slices of eggplant in baking dish alternately with meat sauce and cheese.

8Repeat in layers with cheese on top.

9Bake at 300° for 30 minutes.
