Eggplant Casserole

  • 1 large eggplant, peeled & cubed
  • 1 (8 oz.) pkg. mozzarella cheese, shredded
  • 1 (15 oz.) jar marinara sauce (or your favorite spaghetti sauce)
  • 1/3 c. grated parmesian cheese

Directions

    Cook eggplant in boiling water 5 minutes - drain.

    Place in lightly greased 1 1/2 qt. casserole; add mozzarella cheese & top with marinara or spaghetti sauce.

    Bake at 350 degrees for 30 minutes.

    Sprinkle with parmesan cheese & bake about 5 minutes.
