  • 2 1/2 lb. eggplant, peeled
  • 1/4 c. onion, grated
  • 2 c. milk
  • 2 eggs, beaten
  • 2 3/4 c. bread crumbs
  • 5 1/2 Tbsp. butter
  • 1 tsp. salt
  • 3/4 tsp. pepper
  • 2 c. buttered bread crumbs

Directions

    Cook eggplant in salted water until tender.

    Mash eggplant and combine with next 7 ingredients.

    Place in casserole and bake at 350° for 30 minutes.

    Cover top with bread crumbs.
