- 2 1/2 lb. eggplant, peeled
- 1/4 c. onion, grated
- 2 c. milk
- 2 eggs, beaten
- 2 3/4 c. bread crumbs
- 5 1/2 Tbsp. butter
- 1 tsp. salt
- 3/4 tsp. pepper
- 2 c. buttered bread crumbs
Directions

1Cook eggplant in salted water until tender.

2Mash eggplant and combine with next 7 ingredients.

3Place in casserole and bake at 350° for 30 minutes.

4Cover top with bread crumbs.

5Bake 15 minutes longer.
