- 1 large or 2 small eggplant
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. tomatoes
- 1/2 chopped onion
- 1 small jar pimientos, drained
- 1/2 c. bell pepper
- 2 c. corn bread crumbs
Directions

1Cook the eggplant until tender and drain.

2Add the salt and pepper.

3Mash. Mix together the remaining ingredients.

4Add to the eggplant. Grease casserole dish with butter.

5Pour mixture into dish. Add enough sweet milk to cover.

6Cook at 375° until milk is absorbed, about 1/2 hour. Cover with grated cheese.

7Let cheese melt in oven.
