  • 1 large eggplant
  • 8 saltine crackers, crumbled and soaked in 3/4 c. milk
  • 3 Tbsp. butter
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 1 1/4 c. grated Cheddar cheese

Directions

    Peel, slice, boil and drain eggplant.

    Mix the remaining ingredients together, then add the boiled eggplant.

    Bake at 350° for 1 hour.
