Eggplant Casserole

- 1 eggplant
- 1 medium onion, chopped
- 1 1/2 c. grated cheese
- 3 beaten eggs
- salt and pepper to taste
- pinch of soda
- buttered bread crumbs
- 1 stick oleo
Directions

1Peel and cube eggplant.

2Boil in small amount of water; set to cool.

3Do not drain and mash with fork.

4Saute onion in 1 stick oleo; add cheese, eggs, salt, pepper and soda and add to eggplant. Bake in greased casserole dish in 400° oven for 20 minutes.

5Then add buttered bread crumbs over top and bake for another 10 minutes or until browned.
