Eggplant Casserole

  • 1 eggplant
  • 1 medium onion, chopped
  • 1 1/2 c. grated cheese
  • 3 beaten eggs
  • salt and pepper to taste
  • pinch of soda
  • buttered bread crumbs
  • 1 stick oleo

Directions

    Peel and cube eggplant.

    Boil in small amount of water; set to cool.

    Do not drain and mash with fork.

    Saute onion in 1 stick oleo; add cheese, eggs, salt, pepper and soda and add to eggplant. Bake in greased casserole dish in 400° oven for 20 minutes.

    Then add buttered bread crumbs over top and bake for another 10 minutes or until browned.
