  • 1 eggplant, peeled and thinly sliced
  • 1 large can tomatoes, peeled and sliced
  • butter or margarine
  • flavored bread crumbs (like garlic)
  • salt and pepper

Directions

    Place a layer of sliced eggplant on the bottom of a baking dish.

    Top with a layer of sliced tomatoes.

    Sprinkle with bread crumbs.

    Dot with butter; salt and pepper to taste.

    Repeat with 3 or 4 layers of each.

    Bake at 350° for 1 hour.
