- 1 medium eggplant
- 3/4 c. chopped celery
- 1 small onion, chopped
- 1 1/2 Tbsp. butter
- 3/4 c. milk
- 3 Tbsp. grated sharp cheese
- 1 c. Ritz crackers, crushed
- salt and pepper
Directions

1Peel eggplant; slice and cook in salted water until tender. Drain, mash and season with salt and pepper to taste.

2Add remaining ingredients to mixture and place in casserole.

3Bake for 1 hour in a 350° oven.
