Ingredients

  • 1 medium eggplant
  • 3/4 c. chopped celery
  • 1 small onion, chopped
  • 1 1/2 Tbsp. butter
  • 3/4 c. milk
  • 3 Tbsp. grated sharp cheese
  • 1 c. Ritz crackers, crushed
  • salt and pepper

Directions

    Peel eggplant; slice and cook in salted water until tender. Drain, mash and season with salt and pepper to taste.

    Add remaining ingredients to mixture and place in casserole.

    Bake for 1 hour in a 350° oven.
