Eggplant Casserole

Ingredients

  • 1 medium eggplant
  • 2 Tbsp. butter or margarine
  • 1 egg
  • 1 medium onion, chopped
  • 1 c. bread crumbs or 18 saltine crackers, crushed (I use crackers)
  • 1/2 c. grated cheese
  • 1 c. milk
  • salt and pepper to taste

Directions

    Peel and cut eggplant in pieces.

    Boil until tender and drain. Mash eggplant and butter.

    Add beaten egg, onion, grated cheese, milk, saltines, salt and pepper.

    Mix well.

    Pour into casserole dish and cook 30 to 40 minutes at 350°.
