Eggplant Casserole

- 1 medium eggplant
- 2 Tbsp. butter or margarine
- 1 egg
- 1 medium onion, chopped
- 1 c. bread crumbs or 18 saltine crackers, crushed (I use crackers)
- 1/2 c. grated cheese
- 1 c. milk
- salt and pepper to taste
Directions

1Peel and cut eggplant in pieces.

2Boil until tender and drain. Mash eggplant and butter.

3Add beaten egg, onion, grated cheese, milk, saltines, salt and pepper.

4Mix well.

5Pour into casserole dish and cook 30 to 40 minutes at 350°.
