- 2 strips bacon
- 1/4 carrot, grated
- 1 medium onion, chopped
- 3/4 c. chopped ham or chicken
- 3 c. cold, cooked rice
- 2 eggs, scrambled
- 1/4 green pepper, chopped
- juice of 1 clove garlic
- 2 Tbsp. soy sauce
- salt to taste
Directions

1Fry bacon until crisp.

2Crumble. Cook carrot and onion in bacon drippings.

3Remove from pan. Scramble eggs and remove from pan.

4Fry ham or chicken.

5Remove from pan. Place rice in pan. Add soy sauce, salt and green pepper. Stir until heated.

6Add all ingredients. Serve hot with additional soy sauce, if desired.
