  • eggplant
  • salt and pepper to taste
  • croutons (the same amount as eggplant)
  • Mozzarella and Parmesan
  • sliced tomatoes
  • salt and pepper
  • bacon

Directions

    Butter casserole.

    Dice up eggplant.

    Add salt and pepper. Add croutons on top of eggplant.

    Place a good layer of Mozzarella and Parmesan on, then top with sliced tomatoes, salt and pepper. Place bacon over to cover the tomatoes.

    Bake at 350° for about 45 minutes or until cheese is melted.
