- Mozzarella and Parmesan
- sliced tomatoes

Directions

1Butter casserole.

2Dice up eggplant.

3Add salt and pepper. Add croutons on top of eggplant.

4Place a good layer of Mozzarella and Parmesan on, then top with sliced tomatoes, salt and pepper. Place bacon over to cover the tomatoes.

5Bake at 350° for about 45 minutes or until cheese is melted.
