Eggplant Casserole

  • 1 large eggplant, peeled and cut into cubes
  • 1 large onion, peeled and chopped
  • 1 sleeve saltines
  • 3/4 c. sharp cheese
  • 1 can mushroom soup, undiluted

Directions

    Cook eggplant and onion in a small amount of water until tender; drain.

    Crush saltines; add to eggplant and onion mix.

    If you need, you can add more crackers.

    Then stir in cheese and mushroom soup.

    Place in a greased ovenproof dish and bake for 30 to 45 minutes at 325°.

    You may also sprinkle grated cheese on top.
