- 1 large eggplant, peeled and cut into cubes
- 1 large onion, peeled and chopped
- 1 sleeve saltines
- 3/4 c. sharp cheese
- 1 can mushroom soup, undiluted
Directions

1Cook eggplant and onion in a small amount of water until tender; drain.

2Crush saltines; add to eggplant and onion mix.

3If you need, you can add more crackers.

4Then stir in cheese and mushroom soup.

5Place in a greased ovenproof dish and bake for 30 to 45 minutes at 325°.

6You may also sprinkle grated cheese on top.

7Serves 8.
