  • 1 eggplant
  • chopped onion to taste
  • chopped bell pepper to taste
  • 1 jar pimento
  • 2 eggs, beaten
  • 2 c. grated cheese
  • 1/3 stick oleo
  • 1 small can tomato sauce
  • 1 pkg. Ritz crackers

Directions

    Peel and boil eggplant until tender.

    Drain and mash.

    Saute onion and pepper.
  4. 4
    Combine eggplant, onion, tomato sauce, pepper, salt, pimento, crumbled crackers, beaten egg and cheese.

    Pour into buttered dish.

    Sprinkle cracker crumbs on top.

    Bake at 375° for 25 to 30 minutes.
