- 4 small or 2 large eggplants
- 1 small onion, chopped
- 1 Tbsp. melted butter
- 1 c. shredded sharp Cheddar cheese
- 2 eggs, beaten
- 1 Tbsp. Worcestershire sauce
- salt and pepper to taste
- 1 large tomato, peeled and chopped
- 1/2 c. grated Parmesan cheese
Directions

1Peel eggplant and cut into 1/2-inch slices.

2Cook in boiling salted water for 15 to 20 minutes or until tender.
