  • 4 small or 2 large eggplants
  • 1 small onion, chopped
  • 1 Tbsp. melted butter
  • 1 c. shredded sharp Cheddar cheese
  • 2 eggs, beaten
  • 1 Tbsp. Worcestershire sauce
  • salt and pepper to taste
  • 1 large tomato, peeled and chopped
  • 1/2 c. grated Parmesan cheese

    Peel eggplant and cut into 1/2-inch slices.

    Cook in boiling salted water for 15 to 20 minutes or until tender.

    Drain well and mash.
