- 1 small eggplant, peeled and cut into bite-size pieces
- 2 1/2 Tbsp. butter or margarine
- 1/4 c. shredded cheese
- 1 green pepper, chopped
- 1 onion, chopped
- 3 c. cooked tomatoes
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 c. bread crumbs
Directions

1In a skillet combine butter or margarine, green pepper and onion.

2Cook until tender.

3Next add tomatoes, salt, pepper and eggplant.

4Cook slow for 10 minutes or until eggplant is tender. Pour the mixture into a casserole dish and sprinkle bread crumbs on top.

5Bake at 350° for 25 minutes.

6During the last 10 minutes of baking put shredded cheese on top.
