- 1 large eggplant
- 1 medium onion, chopped
- 1 c. milk
- 1 c. Cheddar cheese
- salt and pepper to taste
- 20 to 24 saltine crackers, crushed
- 2 eggs
Directions

1Cook eggplant, drain, combine with onions, milk, 3/4 cup cheese, salt, pepper and crackers.

2Put in greased casserole and top with 1/4 cup cheese.

3Beat eggs with fork and pour over top of casserole.

4Bake at 350° for 30 minutes or until light brown.
