- 1 large eggplant or 2 small, peeled, diced and cooked
- 1 onion, diced
- 1 bell pepper, diced
- 1 jalapeno, grated
- 1 small jar pimento
- 1 c. cracker crumbs
- 1 egg
- 1 Tbsp. sugar
- 1 tsp. pepper
- 1/2 tsp. salt
- 1 can cream of mushroom soup
Directions

1Eggplant can be cooked in chunks or diced. After cooking, drain well to remove excess water. Saut onion, bell pepper and jalapeno pepper in 1 tablespoon oil until tender, not brown. Mix all ingredients together well. Place in casserole and top with 1/2 cup grated cheese and 1 slice of bacon, cut into pieces. Bake at 350° for 30 to 40 minutes.
