- 1 large eggplant, peeled and sliced
- 1 tsp. salt
- 1/2 bell pepper, chopped
- 2 tsp. grated onion
- 2 c. tomatoes, drained
- 2 eggs
- 1/2 can cream of mushroom soup
- 3/4 c. soft bread crumbs
- 1/2 c. shredded sharp Cheddar cheese
- 1 tsp. black pepper
Directions

1Cook eggplant in boiling water until tender.

2Drain and add salt, bell pepper, black pepper, onion and tomatoes.

3Add eggs and bread crumbs.

4Pour into a 2-quart dish (greased), top with cheese and bake at 375° for 30 minutes.
