Eggplant Casserole

  • 1 large eggplant, peeled and sliced
  • 1 tsp. salt
  • 1/2 bell pepper, chopped
  • 2 tsp. grated onion
  • 2 c. tomatoes, drained
  • 2 eggs
  • 1/2 can cream of mushroom soup
  • 3/4 c. soft bread crumbs
  • 1/2 c. shredded sharp Cheddar cheese
  • 1 tsp. black pepper

Directions

    Cook eggplant in boiling water until tender.

    Drain and add salt, bell pepper, black pepper, onion and tomatoes.

    Add eggs and bread crumbs.

    Pour into a 2-quart dish (greased), top with cheese and bake at 375° for 30 minutes.
