Eggplant Casserole

Ingredients
- 1 medium eggplant
- 1 c. sliced onion
- 2 slices bread (no crust)
- 1 egg
- 1/2 lb. cooked shrimp or mushrooms
- 1/2 stick butter
- 1 c. chopped celery
- salt and pepper to taste
- 1/2 c. grated sharp Cheddar cheese
Directions

1Peel and cut up eggplant.

2Add celery and onions.

3Barely cover with water; cook until tender.

4Drain well in colander.

5Put in bowl.

6Add well beaten egg, melted butter, cheese and bread that has been cut in small pieces.

7Add salt and pepper.

8Put in buttered casserole dish.

9Sprinkle top with 1/2 cup cheese; dot with butter.

10Bake at 325° for 30 minutes.

11Test by inserting knife.
