- 1 large or 2 small eggplants
- 2 Tbsp. butter
- 2 slices stale bread
- salt
- pepper
- bread crumbs or crackers
- 2 eggs
- 1/4 lb. cheese
- chopped onion (1)
- 1 bell pepper, chopped
Directions

1Peel and cut up eggplant.

2Add salt and pepper to taste, butter and stale bread slices, slightly dampened.

3Stir in slightly beaten eggs and about 1/4 pound cheese, cut in cubes. Add chopped onion and bell pepper.

4Pour into a casserole, cover with bread crumbs or crushed crackers.

5Dot with butter and bake for 1/2 hour at 375°.
