- 1 whole eggplant, peeled and diced
- 1 small onion, diced
- 1 lb. bacon
- 1 can condensed tomato soup
- 1/2 lb. Cheddar cheese
- croutons, buttered
Directions

1Peel, slice and dice eggplant.

2Boil until tender, then drain. Place eggplant in 2-quart baking dish that has been sprayed with Pam.

3Brown bacon and onions together.

4Drain off excess drippings.

5Add tomato soup, stirring over medium heat.

6Add cheese.

7When melted, pour over eggplant.

8Add croutons on top. Bake at 350° for 15 to 20 minutes until brown.
