- 1 eggplant
- 1/4 box crackers, crumbled
- 1/2 c. Pet milk or Milnot
- 1 Tbsp. butter
- 1 Tbsp. brown sugar
- 1 beaten egg
- 6 to 8 slices American cheese
- sausage links (optional)
Directions

1Peel the eggplant; cut in chunks.

2Cover with salt water and soak for 1 hour.

3Drain and stew with a little more water until tender (about 15 to 20 minutes).

4In a mixing bowl, combine the next 5 ingredients.

5Should be juicy.

6If not, add a little water. Put in a greased casserole and bake 20 minutes at 350°.

7Lay the cheese slices on top and heat until cheese is melted.

8May also add sausage links, if desired.
