- eggplant, peeled and cut in chunks
- 1/3 c. dry bread crumbs
- 1 egg, beaten
- 2 Tbsp. chopped onion
- 1 lb. hot sausage, cooked, crumbled and drained
- Parmesan cheese
Directions

1Boil eggplant in salted water until tender, then drain and mash.

2Combine next 4 ingredients.

3Add to eggplant; place in buttered casserole dish.

4Sprinkle liberally with Parmesan cheese. Bake at 350° for 30 minutes.
