Eggplant Casserole

  • eggplant, peeled and cut in chunks
  • 1/3 c. dry bread crumbs
  • 1 egg, beaten
  • 2 Tbsp. chopped onion
  • 1 lb. hot sausage, cooked, crumbled and drained
  • Parmesan cheese

Directions

    Boil eggplant in salted water until tender, then drain and mash.

    Combine next 4 ingredients.

    Add to eggplant; place in buttered casserole dish.

    Sprinkle liberally with Parmesan cheese. Bake at 350° for 30 minutes.
