  • 4 eggplant
  • 2 eggs
  • 2 onions, diced
  • 1/2 c. bread crumbs
  • 1/2 c. grated Cheddar cheese
  • 2 slices American cheese

Directions

    Peel eggplant and boil until tender. Drain well and add remaining ingredients. Mix well. Pour in baking dish and bake for 30 minutes at 350°.
