- 4 large eggplants
- 1 1/2 lb. ground beef
- 2 onions, chopped
- 1 bell pepper, chopped
- 2 ribs celery, chopped

Directions

1Peel and cube eggplants.

2Soak in cold, salted water.

3Drain and cook down in 3 tablespoons bacon grease until tender, about 2 hours.

4In another pot, cook remaining ingredients.

5Mix cooked eggplants and meat mixture together.

6Add bread crumbs or rice to absorb liquid.
