- 1 can tomatoes, mashed
- 1 medium onion, chopped
- part of bell pepper, chopped
- 1 c. cornbread crumbs
- 1 egg
- grated cheese
Directions

1Cook onion and bell pepper in bacon grease until tender. Combine with eggplant, tomatoes, cornbread and egg.

2Grate cheese on top.

3Bake 30 to 45 minutes at 350°.
