Eggplant Casserole

- 2 small eggplants
- 1/2 lb. cheese
- 1 c. bread crumbs (4 slices)
- 2 eggs, slightly beaten
- dash of pepper
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1/2 tsp. salt
Directions

1Peel eggplant, slice and boil in water until tender (5 to 10 minutes).

2Drain and mash.

3Saute meat and onion in skillet.

4Add meat mixture, eggs, bread crumbs, cheese and seasoning to eggplant.

5Mix well; pour into a 2-quart casserole.

6Bake at 300° for 35 to 40 minutes.
